Lagers, or lager beers, offer a class of beers with a world of flavours and diversity beyond common knowledge. Most consumers are familiar with the relatively neutral, pale, medium alcohol level, crystal clear, and mildly bitter versions. However, there is a vast range of flavours within the lager category.

Pale lagers are often considered the most drinkable and are therefore the most consumed worldwide, thanks to regional variations and strong branding. However, lager beers exhibit a wide range of characteristics comparable to ale beers, including colour, hoppiness, maltiness, bitterness levels, body, etc. Among the most traditional parameters of lagers is the fermented flavour, which tends to be less intense over time. This parameter changes with new craft lagers, a direct consequence of the chosen yeast and fermentation process.

What Defines Lager Beer?

If it’s not solely flavour characteristics that define lager beer, what does? The answer lies with the yeast species used to ferment it. While ale beers are fermented with a wide range of Saccharomyces cerevisiae (S. cerevisiae) strains, lager beers are fermented with Saccharomyces pastorianus (S. pastorianus), a bottom-fermenting yeast.

Bottom fermentation is often used to describe lager fermentation. Our ancestors, without understanding the phenomenon, used to collect yeast from the top of the fermenters. During this process, a specific phenotype that rises at the end of the fermentation was selected: top fermentation (ale yeast). In contrast, lager yeast is defined by another phenotype; yeast that settles at the bottom of the fermenter. However, today this distinction does not necessarily hold true due to advancements in brewing techniques and yeast management.

Lager yeast is relatively recent in evolutionary history compared to S. cerevisiae. With traces of fermented grain dating over 10,000 years, S. cerevisiae has been part of the human diet for millennia. As a result, numerous domestication events allowed its phenotypes to evolve. Among others, maltotriose utilization has increased, and phenol production, both being important and differential flavour aspects to lagers.

S. pastorianus is actually a hybrid yeast. For a significant period, only one parent of this hybrid was known: S. cerevisiae. More recently, the puzzle was solved with the discovery of Saccharomyces eubayanus, the second parent according to today’s microbial evolution theory. While the exact details of the hybridization event remain uncertain, extensive research has shed light on the process. Most likely, the new hybrid was born when S. cerevisiae and S. eubayanus bred in a brewery environment. A plausible scenario suggests that the breeding may have taken place during fermentation in the cold caves of Bavaria during the 15th century. Cryotolerance, the ability to maintain physiological and genetic stability at low temperatures, played a significant role in the selection of the lager yeast species. Lager yeast was favoured for its capacity to ferment at low temperatures, unlike ale yeast, which struggles to complete fermentation below 16-18°C. Lager yeast can effectively achieve final attenuation at temperatures lower than 11°C. In the Czech Republic, it is not uncommon to transfer beer into maturation tanks at around 3-4°C (when attenuation has only reached 73-75%). This extended fermentation process may take an additional three months but will not stop until it’s over.

Apart from being cryotolerant, the S. pastorianus yeast strain exhibits characteristics such as medium-high attenuation, good flocculation and sedimentation properties, and being phenolic off-flavour (POF) negative. Compared with ale yeast, lager strains have lower genetic diversity.

Lastly, lager yeast is known, apart from exceptions, to be very neutral in its fermentation flavour formation. S. pastorianus does not produce noticeable amounts of higher alcohols (fusel alcohols) and fruity esters compared with S. cerevisiae. But what is neutral in beer? A brewmaster can make the perfect wort in the brewhouse; however, the wort produced will not be a tasty beverage. Wort is heavy, not refreshing, and full of undesirable aldehydes. Only beer yeast can remove the aldehydes and increase the freshness and drinkability—in a word, make it a good beer. To this end, lager beer is not neutral at all (nor is ale yeast). Lager yeast reveals the hidden potential of the raw material used and unveils all the effort of the brewmaster who has worked so hard to make the perfect beer.

Diversity in Lager Beer Styles

When thinking about the vast diversity of lager beer, one common feature comes to mind: balance. Unlike certain modern versions of craft and ale beers, the soul of most lagers is finding the perfect equilibrium between bitterness, sweetness, drinkability, malt character, and fermentation flavours. Finding the perfect strain for each beer style alongside brewery specificity is of major importance. Pilsner is the most iconic style of what is considered a premium lager. A Pilsner typically offers a crisp and refreshing taste with moderate to high bitterness, balanced hoppy notes, subtle maltiness, and a clean dry finish. Fermentation flavour is neutral, just revealing the combination of raw materials used to make the beer.

Fermentis provides ideal solutions for these styles with yeasts such as SafLager™ S-33 and SafLager™ W-34/70, which can ensure neutral character and avoid off-flavours.

Marzen Beer, Oktoberfest, or Vienna lagers are variations of similar styles. From strong golden colour to copper, they are characterized by their rich maltiness, balanced by a clean finish and moderate hop bitterness. These styles showcase a robust malt profile with flavours of toasted bread, caramel, and toffee, balanced by a moderate hop bitterness and clean, dry finish, making them ideal choices for autumnal festivities and cool weather enjoyment. Of German origin, SafLager™ W-34/70 allows a clean fermentation profile to benefit the malty character of Marzen, Oktoberfest, or Vienna lager beers. For slightly fruitier versions, SafLager™ S-23 remains an ideal option that can certainly add a layer of complexity to some malty-fruitiness that can be present in these styles.

In general, fruitiness is a flavour often enjoyed by consumers, and some brewers are diversifying lagers in this regard. Often called estery lager, it is an alternative to the neutral fermentation flavour of S. pastorianus. Although every brewery yeast produces higher alcohols and esters (even in bottom fermentation), in most cases, these volatiles are close to or below their respective flavour thresholds. One of the most important features is the ratio of higher alcohol to esters. A common target is to reach for values between 3 and 4:1. Fermentis SafLager™ E-30 produces significantly higher amounts of fruity esters, specifically isoamyl acetates, that provide a banana-like character to beer, at least two times more than any other lager yeast in the Fermentis range. This yeast allows for innovative alternatives to classic and modern lager beer styles, bringing forward the fermentation fruitiness and adding extra layers of flavour complexity.

Modern advancements are not limited to fermentative and malty flavour diversity; they also encompass the development of new hop nuances. Apart from the traditional and hopped Pilsners, Italian lagers are dry-hopped versions, using the same noble European hop (Saaz, Hallertau Mittelfrüh, Tettnang, Spalt, etc.). The base of the beer is very similar to Pilsner styles with a balance leaning towards hops, having medium to high bitterness, freshness, and lower malt character. The dry hopping adds to the complexity of the beer, providing extra layers of floral and herbal notes, and the yeast choice can make a difference. The perfect yeast to allow for noble hop expression is SafLager™ S-189. Cold IPA, New Zealand Lager, or India Pale Lagers are variations of the lager version of IPA. Characterized by its high hop dosage and medium to high smooth bitterness, these beer styles are diverse and result from the brewer’s creativity. Any variety of hop can be used for dry and late hopping to confer a wide range of fruity notes such as citrus, tropical, floral, or herbal.

In conclusion, lager beers present a rich spectrum of flavour profiles and styles, each possessing its own distinct character. While malts and hops often take the spotlight, it’s essential not to overlook the crucial role of yeast. The craftsmanship of the Brewmaster in harnessing these elements renders lager beer a timeless classic and a beloved choice for beer enthusiasts worldwide.

The beverage industry is looking at reducing its environmental impact and has begun to take big strides in that direction, across the production chain. A major push for the green transformation of the sector can be seen in the increasing use and exploration of sustainable packaging which has evolved from a niche to a necessity for the beverage industry. 

A confluence of factors, including evolving regulations, consumer preferences for eco-friendly products, and the need to reduce emissions, are the primary factors driving the trend towards sustainable packaging.

The rise of new materials

Through constant innovations in others fields, a number of new materials have become available to create containers that can be used for sustainable beverage packaging. 

Plant-based plastic

Plant-based plastics, which are often made from corn starch or sugarcane, are one such replacement for petroleum-based plastics. These bioplastics perform the same role as traditional plastics and are also compostable. They decompose into harmless substances minimising pollution in landfills.

Recyclable packaging solutions

Recycling is one of the pillars of sustainable packaging and has the potential to improve the carbon footprint of the industry.

Glass stands out as a sustainable beverage packaging option due to its recyclability and durability. With an endless lifecycle, it reduces waste and conserves resources. Lightweight glass innovations further minimise environmental impact, making it an excellent choice for eco-conscious consumers and environmentally responsible brands.

Some beverage companies have adopted what they refer to as closed-loop recycling systems, where used bottles and cans are collected and then turned into new packaging. This enables a closed circle of use and reuse, which results in real reduction in virgin material consumption and dramatically decreases the environmental footprint.

Technology involving smart packaging is set to change the beverage industry. The advantages of smart packaging are manifold including sustainability, consumer interaction and more efficient product tracking.

Smart labelling

Smart labelling, with QR codes or NFC chips, offers consumers information such as the origins of the product as well as its recycling instructions. 

With a simple scan or tap of their smartphone, they can access details about the product’s origin, brewing process, and most importantly, recycling instructions.

NFC enabled bottles

NFC-enabled bottles are an example of smart packaging. Shoppers can swipe their smartphone against the bottle to find out more about where the product has come from and how it gets from the farm or factory to the shop shelf. It engages the consumer in recycling and provides easy instructions.

Reusable packaging

Another trend that is gaining momentum is the move back towards reusable packaging. At its core, it tackles the real issue of single-use packaging, turning consumers into return and refill customers for their beverages.

Deposit return schemes

Deposit return schemes (DRS) are used to incentivise consumers to return their used packaging and receive a small refund. These schemes have been successful in reducing litter and increasing recycling rates.

Refillable bottles

Long-lasting glass containers can be used over and over again or recycled easily. With this model, resources used for packaging a single-time product can be significantly lowered and waste curtailed,

Regulatory impacts & the power of consumer demand

Consumers now have a huge impact on how and what brands manufacture. There are greater restrictions being placed on plastic use, and there has been a huge push globally for new regulations to be put in place as we start to see the effects of waste and landfills on communities.

Legal changes

Several nations have passed legislation that forbids the production of single-use plastics and penalises industries that fail to meet recycling goals. In response, businesses are innovating in terms of sustainable packaging to meet regulatory requirements.

This transformation, enforced by changing regulations and consumer expectations, is in turn shaping the future of sustainability in beverage packaging.

Geist Brewing Co.’s Summer Shandy combines the tangy-sweet zing of lime soda with their citrusy, spice-laced Geist Witty Wit, a Belgian-style witbier. BOSS BRASS MONKEY

Tell us about Finch. When did you decide to enter the hospitality space?

The Finch is born from my unwavering passion for hospitality and the pursuit of a truly remarkable dining experience. Since 2017, we have embarked on a journey to create an inviting and serene space where music takes centre stage. Our vision encompasses live performances from bands of various genres, providing an unmatched musical experience. Complementing the melodies is an extensive selection of craft beers, exquisite mixology cocktails, and an eclectic global menu that reflects our minimalist yet refined aesthetic. 

What were the most difficult challenges you faced when you first started?

In the dynamic world of startups, we encountered a multitude of challenges – market competition, sourcing premium ingredients, and assembling a remarkable team. However, one particularly formidable obstacle loomed: establishing The Finch as a distinctive brand with an unforgettable identity. In the early days, live music struggled to capture attention, yet we tenaciously fostered a devoted community of music enthusiasts. Our quest to discover extraordinary musicians and connect with passionate artists was no less demanding. Yet, through unwavering determination and an unwavering commitment to excellence, we have emerged as a cherished haven where culinary mastery converges with captivating live performances. Within our intimate and soul-stirring ambience, guests are transported to a realm where they can escape, unwind, and be enthralled by the enchantment of live music.

What is the USP of The Finch? What is unique about the restaurant and bar?

What is your target market/customers? What is your customer service philosophy?

We primarily cater to business owners, couples, high-end singles, families, tourists with money, wealthy image seekers, and compulsive spenders to provide trendsetting dining experiences. Our customer service philosophy is straightforward – to create an environment that fosters genuine connections, allowing our guests to relax and unwind. We understand that every guest is unique, and we strive to cater to their individual preferences and create a personalized experience that exceeds their expectations.

How has covid affected your business? Do you think consumer preference has changed post covid?

Like many other industries, COVID-19 has impacted our business, leading to temporary closures, reduced capacities, and increased safety measures. However, we have adapted by embracing technology, implementing enhanced sanitation protocols, and expanding our delivery and takeout services. Consumer preferences have indeed changed post-COVID, with an increased emphasis on hygiene, safety, and contactless services.

 How do you market your restaurant? What marketing strategies do you employ?

We employ a comprehensive marketing strategy that includes social media marketing, targeted advertising, Public Relations and influencer collaborations. We also host various events, live music performances, and seasonal promotions to drive footfall and engage our customers. Our marketing approach is centered around creating a sense of community and promoting a lifestyle and experience, rather than just selling our products.

What role does social media play in your marketing strategy?

Social media is an essential part of our marketing strategy, as it allows us to connect with our customers and showcase our brand identity. We leverage various platforms like Facebook, Instagram, and WhatsApp to promote our offers, events, and brand values. Social media also enables us to engage with our customers, understand their preferences, and create personalized experiences.

What are your long-term restaurant objectives?

As the CEO of The Finch, our long-term objective is to become a leading player in the global hospitality industry. We aim to expand our brand across the world by opening new outlets in major cities and tourist destinations. We believe that our unique combination of craft beer, mixology, and multi-cuisine menu, along with our impeccable customer service and minimalist design, will continue to attract a diverse customer base. We also plan to explore new avenues, such as food delivery and catering services, to expand our reach and make our brand more accessible to customers. We also aim to spread globally with the launch of The Finch Bangkok and we are soon looking to expand to other parts of the globe.

When do you know it’s time to expand or open a new location?

As a business, we constantly monitor our performance metrics, such as revenue, customer feedback, and market trends, to determine when it’s time to expand or open a new location. We also conduct thorough research on potential new locations to ensure that they align with our brand values and have the potential to be profitable. Once we identify a suitable location, we develop a detailed expansion plan that includes market analysis, financial projections, and operational strategies to ensure a smooth launch.

How has the restaurant industry evolved since you began?

I have witnessed firsthand the rapid evolution of the restaurant industry over the years. Customers today are more discerning and demand high-quality food, drinks, and experiences. In response to these changing customer preferences, the industry has witnessed a surge in concept-based restaurants, bespoke dining experiences, and innovative menus. Moreover, technology has also played a significant role in the industry’s evolution, with the rise of online ordering, delivery services, and digital marketing. As a result, restaurants today need to be agile and adaptable to stay ahead of the curve.

The restaurant industry has changed 180 degrees over the last few decades. Concept-based restaurants, new trends like craft beer and Mixology, and an uptick in bespoke dining experiences are apparent consequences of the changing time and progressive customer demands. The restaurant is not just an eatery anymore; it’s a place to unwind after a long hectic day to escape the mundane daily routine. It’s more of a place to spend some good moments with your people that lingers long in memories. That leads restaurateurs to transform it into a better experience with novel themes, concepts, and ideas. 

What are some of the industry trends you’ve noticed?

I have noticed several industry trends that are worth mentioning. Firstly, there is a growing demand for sustainable and locally sourced ingredients, as customers become more environmentally conscious. Secondly, there is an increased interest in mixology and craft beer, as customers seek unique and creative drinks that complement their dining experience. Thirdly, there is a trend towards immersive dining experiences, such as chef’s tables and pop-up restaurants, that offer customers a more personalized and exclusive experience. Finally, there is a growing importance of digital marketing and social media in promoting and growing a restaurant brand.

Do you have any advice for aspiring restaurateurs?

My advice to aspiring restaurateurs would be to focus on creating a unique and memorable dining experience for their customers. This involves paying attention to every aspect of the business. I believe to be ahead of the game, Data is very important – it helps you make decisions faster and more accurately. Regular client feedback and action is also vital cog in the game. One must be aware of the latest happenings, trends and openings around the vicinity to stay in control. One also needs to build a strong execution team to get things done effectively.

The flavours were created in partnership with a top beverage development company in the United States, and the drinks are produced at a Goa-based distillery.

The founder and CEO of Lemonwedge Ventures Pvt Ltd, K Santosh Reddy, has a passion for building and scaling consumer brands. With Typo Hard Seltzer, Reddy intends to bring about a new cultural revolution around how people drink and experience alcohol in the country.

In the chat that follows, Santosh Reddy walks us through the roots of the company, the challenges he overcame, the creation of new flavours and recipes, and his future goals for the company.

What inspired you to start a hard seltzer brand, and what sets your brand apart from others in the market?

During my undergraduation in the States, I witnessed a massive cultural shift around how people drink and experience alcohol, which led me to bring hard seltzer to India. What sets us apart is the quality of the product and taste. Most of our sales come from word of mouth. We have spent very little on marketing. We have sold over 8,50,000 bottles in our first year of launch, which is a testament to our product’s quality.

Why Typo? How did you come up with the name? Tell us the story behind it.

In an industry rife with cliched names and messaging, we wanted our branding to be unapologetically radical whilst not taking itself too seriously, and we found just the name that effortlessly embodies the two extremes. Typos are an enigma, those wild occurrences of human nature when we are spontaneous. The significant indicator of living in the moment is not overthinking and certainly not proofreading. When the fingertip meets the screen, our elevated instincts do the work. You can’t engineer that rush of possibility. It just happens

And so does Typo. 

What challenges did you face in launching your brand, and how did you overcome them?

As a young and fast-growing business, challenges come every day. One challenge that we still have is since most of our raw materials are imported, we have to project lead times with precision. Another challenge is ensuring the distribution and liquidation cycle are well thought through.

How do you come up with new flavours and recipes for your hard seltzers?

Initially, we tied up with globally renowned beverage formulation companies, but now we have an in-house team for new flavour formulations. 

What is your target audience, and how do you tailor your marketing efforts to reach them?

Our target audience is between the ages of 21-40+ years. This age bracket prioritizes convenience and is experimental to try out new brands/flavours. We tailor our marketing efforts to reach them through both online and offline channels.

How do you ensure the quality and consistency of your products, and what steps do you take to maintain customer satisfaction?

Quality and consistency are the most crucial factors. We have a quality control team that ensures them. On the customer satisfaction side, we take a lot of feedback from consumers and try to implement those changes to suit their tastes better.

How do you keep up with the latest trends and innovations in the beverage space? What are some of the most exciting developments you’ve seen recently?

Beverages in general, is a very exciting space, and we are partnered with the world’s leading suppliers to incorporate new formulation technologies. Advancements in forward osmosis are enabling beverage companies to improve efficiency in concentrating beverage products such as ready-to-drink, beer & coffee.

Ultra-fast cooling systems based on reverse microwaves are also being developed to serve beverages at recommended temperatures within minutes rather than waiting for the bottle to chill in the fridge. These technologies, among others, allow beverage manufacturers to improve product quality and food security.

We’re also a highly data-driven company and glean insights across the pipeline to optimize production and distribution. 

How do you stay competitive in a rapidly evolving market, and what strategies do you use to stay ahead of the competition?

We stay competitive by constantly listening to our customers, understanding their preferences and developing new products to meet their needs. We also employ online and offline marketing strategies to increase brand awareness and reach new customers. In addition, we target new markets, hire motivated talent and always look to the future and adapt to the changing market conditions.

What is your vision for the future of your brand, and what steps are you taking to achieve your goals?

As a challenger brand in the alcohol space in a rapidly growing market, the potential is huge, and we have plans to go pan-India. Currently, we serve 3 markets – AP, Goa & Telangana, and have sold over 8,50,000 bottles in the first year of launch. We have secured approvals from the authorities and will be launching soon in Karnataka & Pondicherry. We are currently raising growth capital and are hopeful to close the round soon.

What advice would you give someone looking to start their own hard seltzer brand?

My advice to someone looking to start their hard seltzer brand would be to focus on quality and taste and to understand your target audience and their preferences. It’s also necessary to build an efficient supply chain by procuring raw materials, stocking the market, and investing in a quality control team to ensure consistency and customer satisfaction. Additionally, it’s important to stay on top of regulatory requirements and to build a motivated marketing team to increase brand awareness and drive sales. Finally, be prepared to work hard and be flexible in adapting to the rapidly evolving market conditions.

BLR Brewing Co., one of Bengaluru’s most popular breweries, has collaborated with Great State Aleworks to create a unique beer that celebrates the rich flavors of South India.

The Blonde Ale, inspired by the Konkani sweet dish – Patoli, is a light and refreshing beer that is perfect for the hot summers of India. Brewed using local rice from Karnataka, black jaggery, and coconut, it has a creamy mouthfeel with a hint of coconut that complements the sweet notes of jaggery and rice. With an ABV of 5% and an IBU of 15, this beer promises to tantalize the taste buds of beer enthusiasts.

The collaboration between BLR Brewing Co. and Great State Aleworks is a testament to their commitment to pushing boundaries and creating unique flavors that appeal to the Indian palate. The mastermind behind the creation of this beer is the head brewer of BLR Brewing Co., Umang Nair, who teamed up with the talented brewers of Great State Aleworks, Nakul Bhonsle and Divyesh Patil, to bring Blonde Ale to life.

“When Umang and I started discussing this long overdue collab, we thought of brewing a beer based on a dessert known as Patoli, which is common across the coastal regions of 3 adjoining states: Goa, Karnataka, and Maharashtra. And so, we used coconut, jaggery, and rice in this beer. The resultant beer is a light ale with a hint of a coconut and a creamy mouthfeel!” added Nakul Bhonsle, Founder, Great State Aleworks.
