In the ever-evolving world of craft beer, breweries are constantly seeking new ways to engage their audience and boost sales. Two strategies that have gained significant traction in recent years are beer merchandise and variety beer packs. These creative offerings not only enhance brand visibility but also present exciting sales opportunities for businesses in the beer industry.

The Merchandising Marvel

Brand Promotion: Beer merchandise, from branded glassware to t-shirts adorned with witty beer-related slogans, serves as a walking billboard for your brewery. Customers who sport your merchandise become ambassadors for your brand, sparking conversations and piquing interest in your beers.

Additional Revenue Stream: Beyond the primary focus of brewing beer, merchandise can be a lucrative source of income. As enthusiasts and fans seek out unique, brewery-specific items, offering a well-curated selection of merchandise can substantially bolster your bottom line.

Limited Edition Appeal: Introducing limited edition merchandise tied to special beer releases or events can create a sense of urgency among your customers. Scarcity and exclusivity can drive sales and excitement around your brand.

The Variety Beer Pack Advantage

A Flavorful Journey: Variety beer packs are a delightful way for customers to explore different beer styles and flavours within your brewery’s portfolio. Whether they’re new to your brand or loyal fans, variety packs offer a convenient and engaging tasting experience.

Seasonal Selections: Crafting variety packs tailored to specific seasons or holidays can tap into seasonal beer trends and boost sales during peak periods. Think summer packs with crisp, refreshing brews or winter packs featuring robust stouts.

Customization Options: Allowing customers to create their own variety packs from your available beers fosters a sense of ownership and personalization. This not only meets individual preferences but also increases the likelihood of repeat purchases.

Expanding Your Reach

Online Presence: To maximise the sales potential of both merchandise and variety packs, establish a strong online presence. A well-designed e-commerce platform enables customers to browse and purchase your products from anywhere in the world.

Collaborative Marketing: Partnering with local businesses or influencers can broaden your reach. Collaborative merchandise or variety packs can attract new customer segments and create a buzz around your brand.

Events and Promotions: Hosting in-person events, such as beer tastings, merchandise release parties, or festivals, provides an opportunity to showcase your offerings and directly engage with customers.

Feedback-Driven Adaptation

Customer feedback is invaluable in fine-tuning your merchandise and variety packs. Regularly solicit opinions, track sales data, and adapt your offerings accordingly to keep pace with changing preferences and market trends.

In the competitive world of craft beer, sales opportunities abound through beer merchandise and variety beer packs. These strategies not only serve as powerful marketing tools but also open new revenue streams for your brewery. By offering unique and engaging merchandise and thoughtfully curated variety packs, you can enhance your brand’s visibility, appeal to a broader audience, and ultimately boost your sales in the dynamic and ever-growing craft beer industry.

Within a relatively short space of 10 years, India has nearly 250 brew pubs, with the newer ones coming up in Mumbai, Pune, Hyderabad, Goa, Kolkata and Chandigarh. The dazzling lure of pristine beaches by the Indian Ocean, exotic wildlife safaris and sprawling ancient edifices steeped in rich history is enough to keep wanderlusts from coming back to Sri Lanka for more. Fondly referred to as ‘The Pearl of The Indian Ocean’ and packing a whopping eight World Heritage Sites in such a small area, it’s hard to not fall in love with the many wonders this tiny island has to offer – and that includes its food culture.

Arguably one of the best cuisines in South Asia, Sri Lanka’s food is not for the timid-hearted and stands out thanks to the use of the myriad spices that the island is so prized for. As such, the flavours tend to be all the more complex and nuanced.

Fox In The Field, Whitefield, Bengaluru

Fox In The Field, a Whitefield-based microbrewery recently held a Sri Lankan Food Festival where the Brewer World team had a rare chance to interact with seasoned food writer and restaurant critic – Priya Bala. While Priya believes her career in food writing was a little bit of serendipity, this bon vivant has been interested in food and cooking since she was a child. “I come from a family where all the women are splendid cooks! I started baking when I was 7 or 8 years old. Fast forward to when I joined Times of India, and Bombay Times was launched: we were in between food critics and my editor, Bachi Karkaria, suggested I write the reviews. It was very daunting for me as a newbie in my early twenties to be entrusted with commenting on restaurants but I did that and went on to enjoy it!” Priya told us when asked about how her passion for food writing was born.

Today, Priya is hailed for her insightful anecdotes on regional cuisines. She has also edited several Food Guides for Bengaluru in addition to authoring a number of books such as Food Prints – A Trail of Food and Memories, Secret Sauce: Inspiring Stories of Great Indian Restaurants and Start Up Your Own Restaurant: The Definitive Guide for Anyone Who Dreams of Running Their Own Restaurant.

At Fox In The Field, we were greeted with a sumptuous spread of authentic Sri Lankan bar foods, exclusively curated by Priya Bala, which were also paired with beers that have been crafted under the guidance of Head Brewer, Mr. Roop.

We couldn’t help but ask Priya the inevitable question that crops up in the mind of anyone who is new to Sri Lankan cuisine: Is it similar to the food we get in South India? “Well, yes and no,” she replied. “There are just some similarities with Kerala cuisine in the sense that there is a lot of coconut milk used and that it’s seafood-centred, which all coastal cuisines kind of have in common. But it is also very distinct in the use of the spices we use such as cinnamon. The indigenous veggies and greens are also very distinct and there’s also the use of lots of dry fish. We use a condiment called Maldive fish which is super dried tuna and could probably be like the balachung of South Asia. So yes, Sri Lankan food is certainly unique and when I think of home or Sri Lanka, there are certain flavours that stand out that sort of symbolise Sri Lankan food.”

Curation of local Sri Lankan short eats by Priya Bala for the Sri Lankan Food Festival at Fox In The Field

For the Sri Lankan Food Festival curation, Priya drew inspiration from a repertoire of what she likes to call Sri Lankan Short Eats. These can be anything between little snacks to something that can be served at a high tea to something that pairs really well with beer and arrack.

The entire fare was a collection of mouth-watering caramelised onion-infused savoury Seeni Sambol patties and crispy Chinese rolls filled with seasoned chicken, followed by Priya’s very own take on the Malu Pang and finally, some crumb-fried Fish Cutlets.

But that’s not all.

Being a fond beer drinker herself, Priya also offered us some great tips on pairing these short eats with beer styles that we all love!

Check out the full video below:

“The patties are a very popular snack in Sri Lanka and we’ve decided to pair it with Fox In The Field’s Lager,” explained Priya. “The Chinese Roll is honestly one of my favourites and so is the Hefeweizen. The Chinese Roll is also crumb-fried; you can never go wrong with crumb-fried,” she added. “So I’m just pairing two of my favourites together here.”

Crispy Chinese Rolls stuffed with seasoned chicken and wrapped in pancakes, paired with the refreshing Hefeweizen

“The Malu Pang, which also means ‘fish bread’ in Sinhala is also a very popular snack that’s mostly filled with fish,” she continued. “This is my reinterpretation; I’ve put some slightly sweet pork into it and we decided this would go well with the Tripel IPA.”

Savoury Malu Pang buns stuffed with sweet pork, paired with the Tripel IPA

“The fish cutlet is an absolute favourite of mine,” revealed Priya as she moved onto her fourth pairing. “In Sri Lanka this is made with canned fish for some reason, but here we are using fresh fish. It’s very mildly spiced with a hint of green chilli and pepper and is again, crumb-fried, obviously! This one’s served with a side of some very interesting mustard mayonnaise and we thought it would go really well with the Saison Farmhouse. I think this pairing works really well because this is just something you can keep popping into your mouth and the beer washes it down really beautifully.”

For those who are visiting Fox In The Field and want to drink through till dessert, Priya has the perfect pairing for that too! For her fifth and final pairing, Priya introduces us to the Watalappam, which is Sri Lanka’s most popular, most common, ubiquitous dessert. “It’s made with some of the ingredients the island is most well-known for like coconut and palm jaggery and is also scented with cardamom and nutmeg. This one, is being paired with the Chocolate Stout.”

Finishing on a sweet note: the sticky, sweet wattalappam paired with the Chocolate Stout

“What is it about beer and food that makes people want to come together to share as an experience?” we asked Priya.

“More than wanting to come together, I think eating and drinking together is one of the most communal things we can do for sheer pleasure and joy and I really believe in that,” Priya said. “Especially during the lockdown when all of us were so isolated and missed human contact – the thing I certainly missed the most was beer and conversations with friends.”

Of course, this is just a gist of our experience with Priya at Fox In The Field. To get a closer look, check out our video and tell us which pairing appeals to you the most and why!

Are you looking to level up your dining experience from boring to brilliant with a choice pint but are unsure of where to start? You don’t need to be a master chef or brewer to be able to ace matching culinary creations with the right beer styles. Instead, a good place to turn to for some inspiration would be your neighbourhood watering hole!

Today, brewpubs are paying just as much attention to their food selections as they do their beer menus, going the extra mile to ensure one pairs well with the other. Take XOOX Brewmill, for instance. Built from an old mill – a manufacturing unit from the 70s, this magnificent, 15,000 square feet, three-storeyed, Bengaluru-based microbrewery is one of the most spectacular places for great-tasting craft beer the Beer Capital has seen. It attracts both locals and expats with an ambience that seamlessly transitions between cosy corners tucked away indoors and an open-air lounge for those who wish to go the al-fresco way and is even designed to give visitors a live demonstration on how their beers are made.

Undoubtedly, their taps are always brimming over with a wide range of styles but their food leaves you equally spoilt for choice. From flavourful Baida Rotis and Ghee Roasts to light Asian Curries and Cheesy Quesadillas and Pizzas – XOOX Brewmill’s food menu lets you have the best of all worlds! But that’s not all. The staff is on a mission to deep-dive further into the art of beer and food pairing to whip up some scintillating combinations for our tastebuds! On 22nd November, the microbrewery conducted an exclusive tasting session – an intimate gathering of some of Bengaluru’s most revered beer connoisseurs and experts. The focus group was treated to a variety of beer and food combinations, post which, attendees recorded their observations and feedback.

What was on the menu?

A dazzling range of beer styles served with portions of the most lip-smacking dishes! Their famous Japanese Dry Blonde Ale was contrasted with a spiced Tandoori Paneer & Fig while the Mango Cider was matched against savoury chops made of minced soy. A juicy Cheese Chicken Bacon burger accompanied the Smoked Lager and the Milk Stout was married with a side of Kerala Beef Fry. Meanwhile, the Belgian Wit was complemented by a chicken marinated in a tangy, orange-flavoured sauce – the Santrewala Murgh Tikka.

The Brewer World team was ecstatic to be on the guest list and couldn’t resist approaching Rekhansh Karamchandani, Founder and Managing Director of XOOX to pick his brain on bringing beer and food together in perfect harmony.

1. Is there really any right or wrong to the art of beer and food pairing?

Beer and food are both very subjective in nature and there is no textbook definition of pairing the right food with the right beer. But if you know your style of beer and if you know the ingredients that are going into your food – you will most probably be able to tell what works and what doesn’t when it comes to a particular beer style or cuisine. It took a lot of trial and error over the years, by brewers and connoisseurs to put together guidelines on pairing certain beer styles with different categories of food. There are a lot of people who take reference from these sources but I don’t think there is anything definitive when it comes to beer and food pairing.

2. Would you say food pairing is more science or art, or a combination of both?

In my opinion, pairing beer with food is definitely more of an art than science. It is purely the impression each pairing makes on the brewmaster and the chef – a conscious decision they arrive at after analysing what effect a particular beer could have on specific ingredients of a food item.

3. India has so many states and so many special types of cuisine. What are some of your favourite tips to follow when pairing Indian beer with food and why?

Like I mentioned, there are no hard and fast rules when it comes to beer and food pairing. But I do have a few favourite tricks I like to swear by. For instance, India drinks a lot of Wheat beer. I like to pair these beers with some spicy Indian food to contrast the flavours.

For a typically bitter, hop-forward IPA, barbecued meats or any kind of grilled food that gives off that smoky aroma and flavour would be a great compliment. We also do something called the Scotch Brown Ale at XOOX which we usually pair with a lot of delicately flavoured Japanese foods like sushi and exotic seafood. On the other hand, if you’re having a lager, I’d suggest pairing it with something light like a salad.

4. Why, in your opinion should bars, pubs and microbreweries pay just as much attention to their food menu selections as they do to their beer menu?

Firstly, it’s a very conscious decision to open a microbrewery or a taproom. The real reason behind opening a taproom or a microbrewery is that you are marketing – or rather – selling your hero, which happens to be your beer. But what most people forget in the process is that if you have a kitchen associated with the same place where you are selling your beer – food needs to be of prime importance too. We should do complete justice to the experience of the customer by trying to keep those kinds of foods in the menu that marry well with our beers. And though there is no fixed method of doing this, I believe if the brewer and the chef work together on various beer and food combinations, it would definitely elevate the customer’s experience by several notches.

It is very difficult asking pubs, bars and microbreweries to do this because not everyone has the same process, or understands the intricacies of beer and food pairing. But, I think as a community it is very important to learn from each other. The average consumer is looking to have a different experience in a different brewery every time. If the chefs and brewers conceptualise both their beer and food menus keeping customer palate preferences in mind, it will enhance customer experience tenfold!
